Baking dishes under the peka (the baking lid) is a traditional way of preparing food and very popular because in this way all the ingredients retain their taste, aroma and juiciness. It is because the foodstuff is partly baked and partly cooked in its own juices. Any type of meat can be used for peka with the addition of vegetables but one can also prepare octopus, fish and squid in this way. Dishes prepared under the lid are among the top gastronomic offer of Dalmatian cuisine and can be found on the menus of many Dalmatian taverns and restaurants.
