Vitalac is one of the traditional dishes of the island of Brač that is prepared using very young lamb or kid that is still being breast-fed. The offal is then lined on a spit or skewer and wrapped with caul fat and then grilled for half an hour until it becomes crispy. It is then cut into slices, salted and eaten hot. This Brač delicacy is included in the Republic of Croatia’s list of protected intangible cultural assets
