One of the main meat dishes which reflects the deep connection of Dalmatia with the historical roots of the Mediterranean is pašticada. The sweet-sour-salty taste of this speciality comes from ancient Greek and Roman cookbooks, which in our region have been carefully guarded enabling it to survive until this day. That is why every family in Dalmatia has its own pašticada and their own particular recipe. On this island the Hvar pašticada from the small village of Velo Grablje is particularly praised which was once prepared for festivities and today is an integral part of the offer of numerous island resturants.
